Tahini is a customary ingredient in many different middle eastern dishes, especially in Israel. Having been raised in Israel as a young child, it has always been a part of my regular diet. I love the bitterness/sweetness/tang of the ground sesame paste and the texture when mixed with other ingredients. One of my favorite sweet treats is lathering some tahini paste onto a piece of my multi-seed cauliflower bread and then drizzling some local honey over it– yum!!!
When this tahini paste is mixed together with some lemon juice and cumin and salt, it makes a delicious sauce/dressing.

- 1/2 cup tahini paste
- 1/4 cup lemon juice
- 1/2 tsp sea salt
- 1/2 tsp ground cumin
- 1/4 - 1/2 cup water dependent on desired thickness

- Add all ingredients, minus water into bowl and mix together with whisk. Add water into mixture, 1/8 cup at a time until desired thickness is reached.
This tahini sauce is delicious as a salad dressing but also can be used as a marinade and dipping sauce for poultry, beef, fish, and any vegetables, cooked or raw!
