Apple Cake– a fall family favorite!

Typically, at night time when I am putting my son to bed, I will sing to him, and one of his favorites in a song by the White Stripes called “We’re Going to be Friends”. I always think of the way this song starts at this time of year: “Fall is here, hear the yell… Back to school, ring the bell… Brand new shoes, walking blues… Climb the fence, books and pens… I can tell that we are going to be friends…”

Fall is such a special time of year, particularly in New England. The leaves are changing color, there is a crispness in the air, kids are back in school, and the autumn seasonings begin to have a new position up front in our spice cabinet. I love using cinnamon, nutmeg, all-spice, and cloves when I’m baking and cooking at this time of year– it just feels so nourishing!

This recipe listed below is one of my family’s faves– it is deliciously moist and fragrant– we can smell the wonderful smells through our home when its baking in the oven!

Apple Cake (Paleo & Gluten-free)
This apple cake is a nourishing baked treat that incorporates deliciously fragrant autumn seasonings! It can be served warm or at room temperature.
Servings
Ingredients
  • 1 1/4 cup cassava flour
  • 1/2 cup tapioca starch
  • 1/2 cup potato starch or arrowroot powder
  • 3/4 cup ground flax you can buy ground flax or make your own by adding whole flax seeds to a blender.
  • 1 1/2 tsp baking soda
  • 3 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp all-spice
  • 1/8 tsp ground cloves
  • 2 eggs
  • 3/4 cup hemp milk or other milk substitute unsweetened
  • 3/4 cup olive oil
  • 2 1/2 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1/3 cup apple sauce can use apple sauce squeezable in baby food aisle
  • 1 cup apples, chopped and sauteed in olive oil and cinnamon

  • 1 cup apples, chopped and sauteed in olive oil and cinnamon
Instructions
  1. Preheat oven to 350 degrees Fahrenheit (convection if you have) and grease square pan or pyrex that you will be using.
  2. Add all dry ingredients, not including chopped apples, into mixer bowl and mix well until fully incorporated.
  3. In separate bowl, mix all liquid ingredients. Using whisk, mix well until all ingredients are incorporated.
  4. Pour liquid mixture into dry mixture in mixer bowl and mix until fully incorporated.
  5. Fold in chopped apples.
  6. Pour mixture into greased pan and smooth out with spatula.
  7. Sprinkle cinnamon on top of cake.
  8. Bake at 350 degrees Fahrenheit for 45 minutes or longer until golden brown on top and toothpick test comes out clean.
Recipe Notes

This apple cake can be turned into a different type of cake by switching out the apples with other types of fruit or adding nuts to give texture.
