Spice up Spring with Pico de Gallo!

Nothing resembles spring like an abundance of brightly colored fresh vegetables. And what better way to create a rainbow of these deliciously crisp veggies then in a salsa. In Mexico, salsa is referred to as pico de gallo! Check out this recipe and video to learn how to make a fun and very simple version of this tasty dish.

Pico de Gallo (gluten-free & paleo-friendly)
Servings
Ingredients
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 dried or fresh thyme
  • 3 tomatoes, diced
  • 1 jalapeno, seeded and diced (if you prefer no heat at all, you can omit the jalapeno)
  • juice of 1 lime
  • 1/2 tsp sea salt
  • 1/4 tsp cracked pepper
  • 1/4 cup cilantro, diced

Instructions
  1. Mix all ingredients in large bowl. Let sit in fridge for 1-4 hours to increase flavor. Serve and enjoy!
