Ingredients
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 1 dried or fresh thyme
- 3 tomatoes, diced
- 1 jalapeno, seeded and diced (if you prefer no heat at all, you can omit the jalapeno)
- juice of 1 lime
- 1/2 tsp sea salt
- 1/4 tsp cracked pepper
- 1/4 cup cilantro, diced

- Mix all ingredients in large bowl. Let sit in fridge for 1-4 hours to increase flavor. Serve and enjoy!
