Pico de Gallo (gluten-free & paleo-friendly)
Ingredients

red bell pepper, diced

yellow bell pepper, diced

orange bell pepper, diced

dried or fresh thyme

tomatoes, diced

jalapeno, seeded and diced
(if you prefer no heat at all, you can omit the jalapeno)
juice of 1 lime
1/2

sea salt

tsp
cracked pepper
1/4
cup
cilantro, diced
Instructions
Mix all ingredients in large bowl. Let sit in fridge for 1-4 hours to increase flavor. Serve and enjoy!
