Pico de Gallo (gluten-free & paleo-friendly)
Ingredients
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 dried or fresh thyme
  • 3 tomatoes, diced
  • 1 jalapeno, seeded and diced(if you prefer no heat at all, you can omit the jalapeno)
  • juice of 1 lime
  • 1/2tsp sea salt
  • 1/4tsp cracked pepper
  • 1/4cup cilantro, diced
Instructions
  1. Mix all ingredients in large bowl. Let sit in fridge for 1-4 hours to increase flavor. Serve and enjoy!
