I don’t know about you, but I tend to ‘nosh’ pretty regularly when I’m at home and especially now with our current at-home COVID lifestyle, my visits to the fridge looking for inspiration are more frequent! But with my general ‘healthy’ outlook on life, my search can often come up empty when I’m hunting for something small and sweet… This particular ‘Power Bites’ recipe was inspired by my friend, Terry Walters. Terry is a fantastic person and extraordinary Clean Food chef and natural food resource. Her cookbook series is simple to use and has a ton of fun recipes.
The beauty of this recipe is that you can get as creative as you choose and utilize whatever pantry ingredients that you have! Check it out and don’t be afraid to play around

- In large bowl, combine chosen ingredients from above ‘dry ingredient’ list (as many as you choose!).
- Drizzle with natural sweetener option, enough to lightly coat top of ingredients in bowl.
- Toss to make sure all ingredients in bowl are well coated.
- Add chosen nut/seed butter and fold ingredients until everything starts to stick together.
- Note: If too dry, add more nut/seed butter, 1 tablespoon at a time. If too wet, add more dry ingredients, 1 tablespoon at a time.
- Fold/mash/press until dense sticky ‘dry batter’.
- Choose a dish that will allow for 1-inch thickness when batter is pressed down into dish.
- Line dish with parchment paper. Transfer batter onto paper in dish. Cover with second piece of parchment paper.
- Using fingers and knuckles, press down firmly onto batter through parchment paper to create uniform, 1-inch thick, firmly packed layer in dish.
- Refrigerate for at least 1 hour or longer before removing from fridge and cutting into squares.
