Vanilla Cupcakes with Decadent Chocolate Frosting using Simply Paleo Baking Mix

Check out this episode of Simply Paleo with Dr. Ayelet Connell, and watch her demonstrate how to use the Simply Paleo Muffin & Cupcake Baking Mix to make deliciously moist vanilla cupcakes with decadent chocolate frosting that has no added sugar and is sweetened with maple cream!

Decadent chocolate frosting (paleo and gluten-free)

Ingredients
  • 1 cup organic palm oil shortening
  • 1/2 lb maple cream
  • 1/3 cup cacoa powder
  • 1 tbs unsweetened hemp milk or other unsweetened milk substitute
  • 2 tsp vanilla extract
  • 1 pinch sea salt

  • 1/3 cup cacoa powder
  • 1 tbs unsweetened hemp milk or other unsweetened milk substitute

Instructions
  1. Add all ingredients to electric mixer bowl and mix well. Begin mixing on low until all dry ingredients are incorporated, then mix on high until all shortening is no longer visible and smooth consistency is achieved.
  2. If frosting is too thick, add more milk, 1 tablespoon at a time. If frosting is too thin, add more cacoa powder, 1 tablespoon at a time. Be sure cupcakes are fully cooled before frosting or else frosting will melt and slide off cupcakes!
Recipe Notes

This frosting can be made vanilla or another color using natural food coloring by removing the cacoa powder from ingredients. Keep in mind that the maple cream will be incredibly sweet without the added bitterness of the cacoa powder. If you remove the chocolate, then consider either cutting the maple cream in half or removing from recipe entirely!
