Sandwiches are definitely a way of life for us Americans… but sandwich bread is a difficult category to fill when you choose a paleo lifestyle, especially if you can’t eat nuts. Most paleo baking recipes incorporate almond flour and coconut flour which are very nutritious but not optimal for everyone. This Paleo Sandwich Bread recipe is fantastic and very easy. Ingredients
- 1 1/4 cup cassava flour
- 1/2 cup arrowroot powder
- 1/4 cup ground flax seeds
- 6 eggs
- 1/2 cup warm water
- 1/2 cup extra virgin olive oil or avocado oil (avocado oil will give a less sweet flavor to the bread)
- 1 tbs apple cider vinegar
- 1 tsp baking powder
- 1 tsp sea salt
- 1 tbs honey

Instructions
- Preheat oven to 350 degrees F. Line bread tin with parchment paper.
- In bowl, combine cassava flour, arrowroot powder, ground flax seeds, baking powder, and sea salt.
- In electric mixer bowl or large bowl with electric hand mixer, add eggs and mix well until frothy.
- To egg mixture, add water, oil, honey and apple cider vinegar. DO NOT MIX.
- Slowly fold in flour mixture into liquid mixture, using spatula, until fully combined.
- Pour batter into parchment paper lined bread tin and spread out in even layer.
- Bake in oven for 1 hour or longer until tooth pick test comes out clean.
- Let bread cool in bread pan and then on cooling rack before enjoying.
Recipe Notes
This bread is delicious toasted as well. If you are able to make ahead and fully cool, you can slice the bread and store in freezer bag in freezer for future use. Then just take out 1 or 2 pieces and toast to your preference!
