Mixed Berry Waffles (paleo & gluten-free)
Ingredients
  • 1cup cassava flour
  • 2tbs arrowroot powder
  • 1tbs baking powder
  • 1/2tsp sea salt
  • 2 eggsroom temperature, separated
  • 1/2tbs vanilla extract
  • 1/2cup olive oil
  • 3/4cup hemp milkor other unsweetened milk substitute such as coconut milk
  • 1/2cup mixed berrieschopped (optional)
Instructions
  1. Grease and preheat waffle iron.
  2. Mix dry ingredients in large mixing bowl.
  3. In electric mixer with whisk attachment or with hand beater, beat egg whites to stiff peaks.
  4. In separate bowl, add egg yolks, vanilla, olive oil, and milk and mix well.
  5. Add liquid mixture to dry mix bowl and mix well.
  6. Fold in egg whites.
  7. Fold in optional added ingredients.
  8. Spoon batter into waffle iron.
  9. Remove from waffle iron when ready.
  10. Eat right away or freeze for future.
Recipe Notes

You can mix up the flavor profile by replacing mixed berries with chopped bananas and chocolate chunks or chopped nuts and bananas or sautéed apple chunks and cinnamon– get creative!!! Also, this recipe works for a regular waffle iron or a Belgian waffle maker– both create deliciously crisp outside and yummy soft inside waffles.
