Don't put garlic in your dish too early. It brows really fast and can burn! It only needs about 2 minutes on medium low heat in the sauté pan before you add other ingredients!

PS - Why buying garlic, use your thumb to apply pressure to the bulb, it should be very firm.  Avoid any green coming out of the top of the head.

PPS - The smaller you cut it the stronger it will be!
