Grilled Mahi Mahi with Watermelon Salsa
Happy Tuesday kittens. I've been grilling up a storm. It just feels right, Summertime in California with fresh fish on the grill, fruit salsa, yeah. I'll get to the recipe in a minute but I have to confess, I've been drinking A LOT.
I swear every night around the same time, I'm ready for a vodka soda with lime. Worst part? I totally see some extra jiggles. Like the other day when I was walking around in my underwear, I could literally FEEL my ass jiggling behind me like it was an unattached appendage. Now, I'm all for booty (and so is my hubs) but extra jiggle just isn't going to cut it. It's bikini season for crying out loud!
Did you know that drinking alcohol sends us into a state of temporary hypoglycemia? It increases insulin secretion which pulls too much sugar out of the blood stream. In terms of calories, alcohol has twice as many calories per gram as regular sugar! It also disrupts hormones, increases insulin secretion and increases gut permeability.
At any rate, I'm not here to lecture you, drink alcohol wisely, no matter what, it's not Paleo. There are better options like the Nor Cal Margarita but if you're tying to lose weight, it will be your number ONE and singular downfall. And it causes ass/love handle jiggles. Be forewarned! As I say this I chuckle because it's my birthday week, maybe I'll cut back next week haha!
Okay so now that I just to a shat on all of your summer plans lol, let's talk about yummy food. This recipe for Grilled Mahi Mahi with Watermelon Salsa is so easy and it's a perfect Summertime dinner.
Fire up the grill bunnies! It's so simple!
- Heat up the grill to medium high heat
- Drizzle the EVOO over the fish
- Use a balled up paper towel with EVOO to put a little on your grill
- Season with S&P
- Throw it on the grill for no more than 6-7 minutes per side
I served mine with a simple green salad with slivered almonds and cauliflower rice with ghee and cilantro.
