Happy Sunday Lovers!
Not sure if you heard but SimplyPaleo (and Lauren and her hubby Jeremy and our boxer daughter Lucy) made the ultimate trek across the good land. I have a couple notes I would like to point out (RANT)
- I feel like Truckers have got it rough, long hours, endless road and big machines. On top of that can you imagine what they’re forced to eat on the road?? I know we encourage “planning your Paleo meals” for trips but this would be one hell of a task within the trucker group. I PLAN TO REMEDY THIS by the way, not sure how but I will. Hot food for them equals processed nastiness from a gas station and a bowl of worse nasty from the closest Flying J. To be clear, even if these men and women are thinking healthy, they have the BIGGEST of big obstacles to conquer to eat even slightly Paleo, this makes me very ANGRY!
Here is our story. My husband and I left our Grace-land of Santa Barbara, CA to find a better life in Colorado. I believe we’ll find what we’re looking for but the travel itself was GNARLY!
My hubby and I were kind of well prepared:
Our 2 ice chests full of water, Coconut water and fresh plums and peaches, fresh hard boiled eggs, and 2 bags of jerky, pumpkin seeds and fresh carrots.
Right!? You’re thinking, “ya’ll are cool- effing hippies.” As it turns out we were not so well planned for our 3 day adventure. We had cheat meals in random, dust and lightening filled towns where I mark our success by “this is the last town I successfully shit in……..” It’s ridiculously sexy, and I know this
That being said, we honestly did the best we could…..there were some cheat meals we couldn’t avoid. We wanted to stick Paleo, we knew overall if our bodies felt good and were being nourished the move in general would be so much easier! I have to say this was our biggest Paleo challenge to date.
Okay, enough whining. Obvi the trip was gnarly (oh yeah forgot to mention the 3 blown tires, Jeremy’s WICKED sickness with a fever and an extra night in the mountains). My job as the Paleo Princess was to get us straight back on track and cook my 1st Paleo meal in our new BEAUTIFULLY appointed kitchen!

FIRST- BEFORE YOU COOK- QUEUE UP THIS TRACK! And crank it EEEUUUPPPP!
Bacon, Kale, Shallot Ground Beef Stuffed Bell Peppers (PLUS LUNCH)
3/4 lb fresh bacon from your butcher, cooked on the soft side
2 lbs grassfed ground beef
2 large bell peppers (I used orange)
1 tbsp coconut oil
3 tbsp chopped tarragon
5 shoots Kale- de stemmed and finely chopped
Salt and Pep
Preheat the oven to broil. Toss the shallots coconut oil and tarragon in the pan and take a big whiff! Add the ground beef and let it brown. Next, add the kale and bacon and let them hang out together for a few minutes, add salt and pepper.
Now fill your beautiful peppers to the brim! You can pack the meat in with the spoon and plop them in the oven in a baking dish for about 15 minutes. Just to let the bell pepper soften.
The best part about this dish is it leaves you with leftovers. Jer and I heated up the beef mix and had it for lunch the next day with fresh eggs! I served this with avocado and roasted brussels from whole foods (I didn’t make em).
